Pink Julep in the Kitchen: Lemon Sole

Mr. Julep and I tried Lemon Sole filets for the first time recently and it's truly delicious. I thought I would share the recipe for how we prepared it, because well, it was quite perfect!

Ingredients
2 lemon sole filets
the juice of 1 lemon
1 teaspoon of lemon pepper
pinch of salt

1. spray a slotted broiling pan with non-stick cooking spray and preheat the oven to 375.

2. Cut 1 lemon into quarters and squeeze over filets as desired.

3. Sprinkle filets with lemon pepper and salt. If you like a bit of spice, also sprinkle a tad of Cayenne Pepper.

4. Bake at 375 for about 35 minutes or until done.

We ate this with white rice and some corn and it was delicious! Really healthy and the fish isn't too flaky - it has a meaty consistency quite similar to chicken and doesn't taste fishy at all.
